Fudge is the easiest way to celebrate spring

There is no better treat to satisfy a sweet tooth than simple, old-fashioned fudge. The perfect dessert for any occasion, fudge is incredibly simple and only takes twenty minutes to make. Furthermore, this original recipe can be easily changed to your liking by adding nuts or different spices or replacing dairy products with vegan substitutes. With or without alterations, this flavorful fudge is sure to be a favorite.

Ingredients

  • 4 cups white sugar

  • 1 cup baking cocoa

  • 2 cup milk

  • 1/2 tsp nutmeg or other preferred flavorings

  • 1/2 tsp salt

  • 8 tbsp butter

  • 2 tsp vanilla extract

Directions

  1. Grease two square 8×8 baking pans with butter.

  2. In a large saucepan, combine the sugar, baking cocoa, spice, salt and milk and stir them together. Bring the mixture to a boil over high heat while stirring constantly.

  3. Reduce heat to medium-high and simmer without stirring the mixture. Monitor the temperature of the mixture using a candy thermometer. Be prepared for the mixture to bubble and rise.

  4. When the mixture reaches 238 F, remove from heat.

  5. Beat butter and vanilla into the mixture using a rubber spatula. If desired, nuts or other toppings may be incorporated into the fudge during this step. Only stop beating the mixture when it loses its shine.

  6. Pour the mixture into the two prepared pans and cool. Once cooled, it may be cut and served or saved for later.

  7. If you wish to make hot fudge instead, use a quarter of each ingredient and follow steps 1-3. Remove the mixture from the heat when it reaches 210 F. Set the mixture aside to cool.
