Fall Treats

There is no better way to spring into the fall season than with a collection of mouthwatering seasonal recipes. These delectable treats combine classic seasonal flavors like pumpkin spice and apple cinnamon with dessert favorites like doughnuts, marzipan and hot drinks. Trust us when we say these will ‘leaf’ you wanting more!

Pumpkin Spice Doughnuts

With the beginning of fall comes the beginning of the pumpkin spice craze. It seems that no one can get enough of this classic autumn flavor. These doughnuts, greatly DELETE GREATLY inspired by Little Sweet Baker, use a short and simple recipe to take this popular flavor to a whole new level, creating a delicious treat that will give your family ‘pumpkin’ to talk about!

Doughnut Batter Ingredients

  • 1/2 cup (125ml) vegetable oil

  • 3 large eggs1

  • 1/2 cups (300g) granulated sugar

  • 1 1/2 cups (365g) canned pumpkin purée

  • 2 tsp pumpkin pie spice

  • 1 1/2 teaspoons salt

  • 1 1/2 teaspoons baking powder

  • 1 3/4 cups minus 2 tbp all-purpose flour

Sugar Coating Ingredients

  • 1/2 cup granulated sugar

  • 1 3/4 teaspoons cinnamon

  • 1/4 teaspoon nutmeg

Baking Directions

  1. Preheat the oven to 350°F. Grease two doughnut pans of standard size.

  2. In a large bowl, whisk all of the doughnut batter ingredients except for the flour at medium speed until smooth.

  3. Add the flour to the mixture and stir until smooth.

  4. Fill the doughnut pans about 3/4 full. Bake until a toothpick inserted into the center and comes out clean, about 15 minutes. Let cool until touchable.

  5. Toss all sugar coating ingredients in a medium ziplock bag. Insert a warm doughnut into the bag, gently shake to coat, and repeat for all doughnuts. Cool on a wire rack or enjoy warm.

  6. If extra doughnuts, store on a cooling rack and cover with wax paper.

Apple Cinnamon Drink

Apple cinnamon is yet another autumn favorite. Our original concoction takes this well-known flavor and elevates it into a sweet, creamy, warm drink, topped with fresh whipped cream and caramel. Everyone is sure to love this ‘a-peel-ing’ treat! I THINK THIS IS A REALLY GOOD JOKE, BUT YOU TALK ABOUT THE PEELED APPLE AFTER YOU MAKE THE JOKE. I AM NOT SURE IF READERS WILL UNDERSTAND THE JOKE BEFORE READING ABOUT THE PEELING APPLE

Ingredients

  • 1 large red apple, peeled

  • 1 cup of milk

  • 1/2 vanilla bean, seeded

  • 2 1/2 teaspoons cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 cup brown sugar

  • 1 tablespoon butter

  • 1 tablespoon water

  • 1 1/2 cups heavy whipping cream

Directions For Preparing

  1. Peel and chop the apple into small pieces.

  2. Grease a pan and put it on medium heat.

  3. In the pan, place the sliced apple, brown sugar, butter, water, nutmeg and 2 teaspoons of the cinnamon. Let the apple cook until it is soft and the sauce around it has formed a caramel-like texture, stirring occasionally.

  4. In a small saucepan, heat the milk at medium heat. Let the vanilla bean and 1/2 teaspoon of cinnamon sit in the milk as it heats, to best infuse the milk with flavor.

  5. Once the milk has started to bubble, take it off the heat and remove the vanilla bean. Be sure not to let it bubble for too long, or it will expand and there will likely be overflow. Let the milk cool slightly.

  6. In a large bowl, whip the heavy whipping cream on medium-high speed until stiff peaks form. Be careful not to over whip. If preferred, add 1 1/2 teaspoons of cinnamon and 1/4 teaspoon of nutmeg, or add the spices to taste.

  7. In a blender or food processor, place the apple mixture, setting aside some of the caramel sauce for topping, 1/2 of the milk, and 1/2 cup of the whipped cream. Once everything is thoroughly blended, slowly add more milk and whipped cream until the desired texture is reached.

  8. Place mixture into a cup and top with whipped cream and remaining caramel sauce. Serve hot or cold. You may have to reheat the mixture to serve hot.

Spiced Marzipan

Our fall take on this classic treat is sure to ‘spice’ up your world. This dessert combines the well-known taste of marzipan with the timeless flavors of cinnamon and nutmeg. Both simple and delicious, this recipe is bound to be a favorite.

Ingredients

  • 1 cup almond flour

  • 2/3 cup powdered sugar

  • 1 tablespoon water

  • 1 teaspoon vanilla extract

  • 1 teaspoon lemon juice

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

Directions For Preparing

  1. Combine all dry ingredients in a medium bowl. Mix well.

  2. Combine all wet ingredients in a small bowl. Mix well.

  3. Spoonful by spoonful, add the wet ingredient mixture to the dry ingredient mixture, mixing as you go. One spoonful can make all the difference in texture, so make sure the wet ingredients are fully incorporated before adding the next spoonful.

  4. If the texture is too wet or sticky, add more of the dry ingredients. If it is too crumbly and not holding shape, add more of the wet ingredients.

  5. Once you have reached a desired texture, feel free to shape and color the marzipan or eat as is. Note that if dying the marzipan, use food paste and not food dye, as food dye will upset the texture.
